Jim Johnson's Christmas Casserole



8 Eggs

Salt & Pepper

½ lb breakfast sausage

½ lb bacon, cubed

½ lb chorizo sausage

½ lb ham, cubed

½ cup diced green peppers

½ cup diced onion 3 cups cheese, shredded

1 bag of tater tots


STEP 1: Preheat Oven to 375 degrees and grease a casserole dish. Line the bottom of the casserole dish with tater tots, and sprinkle 1 cup of cheese over the top of the tater tots.

STEP 2: Whisk the eggs in a bowl to scramble.

STEP 3: Brown all of the onions, peppers & meats. Then mix everything in a bowl with the eggs and stir well, reserving one cup of cheese.

STEP 4: Pour the mixture over the tater tots. Around the edges but the leftover cheese to create crispy edges. Bake 40-45 minutes or until golden brown.
